OVERNIGHT - Soak 400 ml of dry beans in pot with 3 times the water
NEXT MORNING - Pour beans into a collander and rinse - leave to drain
CUTTING BOARD - Chop and Choose, onions 1-2 large, celery, 1 cup, potato, 1 cup, tomato, 1 cup - two tomato paste, 1-2 tablespoons
FIRE IT UP - Start with onions in a the hot pot your going to cook your beans in, keep adding other veggies - tomatoes second as the juice will help pull some flavor out of the oninons
KEEP STIRRING - get all the veggies in now add your spices
SPICE TO TASTE - cumin, sage, oreganum, salt, pepper, chilli - fresh or dried
WHEN VEGGIES ARE BREAKING DOWN - 6-8 MINUTES
TOP WITH WATER
BRING TO BOIL
TURN TO SIMMER - 2-3 hours, stirring occasionlly, adjusting salt and seasonings.
Makes 5-6 meals for two people of one hearty bowl each.
