Veggie Chilli Beans - In 10 Minutes

  1. OVERNIGHT - Soak 400 ml of dry beans in pot with 3 times the water

  2. NEXT MORNING - Pour beans into a collander and rinse - leave to drain

  3. TURN TO SIMMER - 2-3 hours, stirring occasionally, adjusting salt and seasonings. tomato, 1 cup - two tomato paste, 1-2 tablespoons

  4. KEEP STIRRING - get all the veggies in now add your spices

  5. SPICE TO TASTE - cumin, sage, oreganum, salt, pepper, chilli - fresh or dried

  6. WHEN VEGGIES ARE BREAKING DOWN - 6-8 MINUTES

  7. ADD BEANS

  8. TOP WITH WATER

  9. BRING TO BOIL

  10. TURN TO SIMMER - 2-3 hours, stirring occasionlly, adjusting salt and seasonings.

  11. Makes 5-6 meals for two people of one hearty bowl each.
