Veggie Chilli Beans - In 10 Minutes

  1. OVERNIGHT - Soak 400 ml of dry beans in pot with 3 times the water

  2. NEXT MORNING - Pour beans into a collander and rinse - leave to drain

  3. CUTTING BOARD - Chop and Choose, onions 1-2 large, celery, 1 cup, potato, 1 cup, tomato, 1 cup - two tomato paste, 1-2 tablespoons

  4. FIRE IT UP - Start with onions in a the hot pot your going to cook your beans in, keep adding other veggies - tomatoes second as the juice will help pull some flavor out of the oninons

  5. KEEP STIRRING - get all the veggies in now add your spices

  6. SPICE TO TASTE - cumin, sage, oreganum, salt, pepper, chilli - fresh or dried

  7. WHEN VEGGIES ARE BREAKING DOWN - 6-8 MINUTES

  8. ADD BEANS

  9. TOP WITH WATER

  10. BRING TO BOIL

  11. TURN TO SIMMER - 2-3 hours, stirring occasionlly, adjusting salt and seasonings.

  12. Makes 5-6 meals for two people of one hearty bowl each.
