NEXT MORNING - Pour beans into a collander and rinse - leave to drain
TURN TO SIMMER - 2-3 hours, stirring occasionally, adjusting salt and seasonings. tomato, 1 cup - two tomato paste, 1-2 tablespoons
KEEP STIRRING - get all the veggies in now add your spices
SPICE TO TASTE - cumin, sage, oreganum, salt, pepper, chilli - fresh or dried
WHEN VEGGIES ARE BREAKING DOWN - 6-8 MINUTES
ADD BEANS
TOP WITH WATER
BRING TO BOIL
TURN TO SIMMER - 2-3 hours, stirring occasionlly, adjusting salt and seasonings.
Makes 5-6 meals for two people of one hearty bowl each.
